Have criminals ever used ebay to disperse evidence worldwide? How would Detectives approach this situation?

Would the records of the transactions be all they need, or would they need to recover each item, possibly having to travel around the world on a treasure hunt. (lets assume that because of alibis or whatever, the case strongly relied on the physical evidence)

Yes they do.
The FBI and locals handle it.
There were people in Cali who were selling pieces of the Columbia on eBay. They got jail time.
Ebay has your email address, and usually your credit card information. If you have PayPal, they have your checking account info as well. They turn it all over to the FBI when presented with a warrant.
